1 cup whole milk
4 eggs
3 tbs sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp baking soda
1 tsp aji amarillo powder
1/2 tsp cinnamon
2/3 cup all purpose flour
4 tbs butter

3 tbs brown sugar

oliver's baked apple pancake

A traditional baked German Apple Pie recipe with a few twists.  The pairing of aji amarillo powder with apples does wonders in adding a depth of flavor. 
You may choose to substitute ripe red or Anjou pears. In this case, Red suggests substituting 1/4 tsp cardamom for half the cinnamon and up to 3 tbs pear liqueur (Red raves about Belle de Brillet's cognac overtones) for the vanilla. 
  1. Preheat oven to 425 F.  Place a cast iron skillet on the middle shelf.
  2. Thinly slice apples. Add butter to skillet and allow to melt, then arrange apples on bottom. Return to oven for 10 minutes.
  3. Wisk all remaining ingredients, but brown sugar and walnuts together until smooth, then pour over apples. 
  4. Scatter walnuts over top of batter.
  5. Bake 15 minutes then scatter brown sugar over top of pancake.
  6. Return to oven for an additional 10-15 minutes until pancake is done (test with knife in center).
Goes great with pear ginger rosemary habanero syrup.
